Connie, loved chatting with you. Luckily, I have 30 years chefs experience behind me or that giant 21# turkey would have sent me runnin' for the hills....

Of course there were no conventional roasting pans that "Mr. Puff" would fit in, I went searching for that 2inch hotel pan that was stored in the garage, just a quarter inch smaller than the width of my oven.… even trussed the boy's neck hit the wall of the oven going in.… but in he went!

Roasted, on his stomach, for 2 hours convection roast, then turned over for another hour, after an hour rest he was perfect!!!!   Every one raved about it being the best turkey they had ever had, needless to say everyone took home left over's, today I will simmer the bones for that perfect turkey soup.

I will definitely look to your business for my next turkey dinner.
